An Irish Cake


Yesterday I prepared a very good Guinness cake!. I've found on the web many recipes of this cake, but in the end I followed Nigella's recipe with some little changes!
The Guinness cake has s sweet flavor thanks to the union between cocoa and dark beer. The final presentation provides on the cake top a cream made with mascarpone and cream cheese.
I've overlooked this particular just putting powdered sugar in hopes of making a cake more light (because the amount of butter is really great!). So it is good anyway, but surely with the cream the result is an even better (the cream symbolize the typical white foam characteristic of this type of beer!).

Ieri ho preparato una buonissima Guinness cake. Ho trovato sul web molte versioni di questo dolce, ma alla fine ho seguito la ricetta di Nigella con qualche piccola variazione!
La Guinness cake è un dolce dal sapore deciso grazie all’unione tra cacao amaro e birra scura. La presentazione finale prevede sul top della torta una crema a base di mascarpone e formaggio cremoso tipo Philadelphia. Io questo particolare l’ho tralasciato mettendo solo zucchero a velo nella speranza di fare un dolce più light (visto che la quantità di burro è davvero tanta). 
Così è buono comunque, ma  sicuramente con la crema il un risultato è ancora migliore (la crema simboleggiare la tipica schiuma bianca caratteristica di questo tipo di birra!).

Per queste foto ho utilizzato un Leprechaun di feltro comprato a Dublino un po’ di tempo fa e un libro di ricette irlandesi che molto spesso utilizzo (questa torta non c’è in questo libro!)


Here's a little historical reference:
The Leprechaun is a typical Irish fairy whose name has several etymologies: little spirit, cobbler or cripple small Lugh (Lugh is where the name of the head of the mythical Gaelic people of the Tuatha Dé Danann).
They are considered part of the "fairy folk". As the story goes, Leprechauns inhabited the island before the arrival of the Celts and are therefore they are often associated with places where there are "magic rings", places that are often characterized by pre-Celtic ruins.

Il Leprechaun è il tipico folletto irlandese il cui nome ha diverse etimologie: piccolo spirito, ciabattino o piccolo storpio Lugh, dove Lugh è il nome del capo del mitico popolo gaelico dei Tuatha Dé Danann.
I Leprechaun sono considerati parte del "popolo delle fate" e la tradizione vuole che abitassero l'isola prima dell'arrivo dei Celti e per questo sono spesso associati a luoghi dove sono presenti i cosiddetti "anelli magici", luoghi spesso caratterizzati dai ruderi di costruzioni di epoca pre-celtica.

The history of Guinness has more than three hundred years and dates back to 1759 when the young Arthur Guinness at the age of 34 years old rented, with a contract for 45 pounds a year and a clause granting to him and to his heirs to benefit from the local (well for 9000 years!) the old customs house in St.James' s Gate, one of the ancient gates of the city not far from the River Liffey.


La storia della Guinness ha più di trecento anni e risale al 1759 quando il giovane Arthur Guiness all’età di 34 anni investì un piccolo capitale e affittò, con un contratto di 45 sterline l'anno e una clausola gli garantiva a lui ed ai suoi eredi di poter beneficiare dei locali (per ben 9000 anni!!), il vecchio casello daziario di St.James's Gate, una delle antiche porte della città poco lontano dal fiume Liffey.

Thus was born the Guinness beer that was light but at the beginning what would become strong and dark to compete against the other beer called Entire or Porter.
The peculiarity of this beer is that it contains nitrogen as well as carbon dioxide. Nitrogen is less soluble than carbon dioxide, which allows the beer to be put under high pressure without making it fizzy and creates the compact foam. 
The four 'magic' ingredients  are malted barley and not, hops, yeast and water strictly sourced from 'Lady's Well' situated in the Wicklow Mountains which makes full-bodied beer and the creaminess of the foam.
The old factory with its original Georgian door is still in St.James Street, but it is not open to the public like the Guinness Hope Store in Crane Street.

Nacque così la Guinness una birra che all’inizio era leggera ma che poi sarebbe diventata robusta e scura per contrastare il mercato della birra della concorrenza chiamata Entire o Porter.
La particolarità di questa birra è che è spillata in carbo-azoto e non in anidride carbonica. Ciò la rende ferma, con meno bollicine e crea la catteristica schiuma compatta. I quattro ingredienti ‘magici’ sono orzo maltato e non, luppolo, lievito e l’acqua rigorosamente di provenienza dalle ‘Lady's Well’ situata nelle Wicklow Mountains che rende corposità della birra e nella cremosità della schiuma.
La vecchia fabbrica con il suo originale portone georgiano sorge ancora in St.James Street, ma non è aperta al pubblico al contrario del negozio in Crane Street.

La ricetta della Guiness Cake:

Per la torta
250 ml Guinness
250 grammi di burro 
75 grammi di cacao in polvere
400 grammi di zucchero 
142 ml di panna acida (in alternativa ho usato un po’ di latte)
2 uova grandi
1 cucchiaio di estratto di vaniglia
275 grammi di farina
2 ½ cucchiaini di bicarbonato di sodio

Per la farcitura
300 grammi di crema di formaggio
150 grammi di zucchero a velo
125 ml di panna 

Procedimento
Riscaldare il forno a 180°.
Versare la Guinness in una pentola aggiungere il burro e riscaldare finché il burro non si fonde. Aggiungere cacao e zucchero. 
A parte sbattere la panna acida con le uova e la vaniglia e poi unire i due composti. Aggiungere farina e bicarbonato (attenzione, non c’è lievito quindi il bicarbonato è essenziale!).
Versare l'impasto nella tortiera imburrata e infarinata e far cuocere per 45 minuti circa foderata e infornare per 45 minuti a un'ora. Poiché è una torta abbastanza umida lasciarla raffreddare completamente su una griglia. 
Nel frattempo montare leggermente la crema di formaggio fino a renderla liscia. Aggiungere prima lo zucchero setacciato e poi la panna. Sbattere fino a quando non raggiunge una consistenza spalmabile. Mettere la crema sulla parte superiore della torta in modo che risulti simile al top schiumoso della famosa birra!
